Right now there is a ton of stuff in the repo (but also dockerfiles, docker_compose.yml) that is unnecessary (e.g. do we need to build extensions from source?)

A minimal & tested repository.

Keeping it messy.
Additional context
maybe a good task to assign to someone to get familiar with docker and the logic of this project.
