Fatal Error in parser #1

Really fun project. I've tried to get it to run in a few different contexts but I always end up in this error:
PHP Fatal error: Uncaught ValueError: mb_convert_encoding(): Argument #3 ($from_encoding) must specify at least one encoding in /mastodon-followed-blogs/vendor/mf2/mf2/Mf2/Parser.php:96

Doesn't seem to be related to any particular URL. This one ended on http://www.ghostweather.com/.
Not sure if you want to put any more time into the script. But just in case - it's something I experience on Pop_OS!.
