Showing all tasks completed in the last week not working, is my syntax correct?

LIST from "tasks" WHERE completed_at > date(today) - dur(1 day)

You probably want a TASK query:

TASK FROM "tasks"
WHERE completed_at > date(today) - dur(7 days)
