Override the Automatic Task Completion Field for a specific data view

I would like to implement some sort of review process for my tasks and as such would like to be able to create a dataview list similar to the below:

set completionKey = 'lastReviewed'
task from "meetings" where !lastReviewed

so then with this list, if I check a particular box it would set lastReviewed on that task to today, but not complete the task...

So you are looking for a separate 'reviewed' metadata entry that is distinct from completion, that you can toggle via a button / box? I don't think this is quite possible, though it should be soon when dataview "edit" mode is available.
