Update wind value to new device class

As of 2025.3.0 there is now native support for a wind sensors device class, which will presumably fix up the history values too.

They added Wind direction to the SensorDeviceClass but until the API returns wind direction in degrees the component can't be updated. It arrives in compass/quadrant format only. Probably a close for now and a complete review of everything if/when the API ever gets updated or published.

Don't ever expect the BoM to publish the API. If you read the copyright notice they really don't want anyone to use it as they feel it should only be used by their products. This API only exists to support the mobile app and possibly something new they are working on at beta.bom.gov.au.

As noted earlier. Wind direction is provided in the 16 cardinal points. This does not align with the needs of this class so cannot be implemented. This can be closed as well @Makin-Things
