Deactivate or remove apps completely (docker)

We are self hosting cal.com with docker and I want to deactivate certain apps completely and constantly. I saw there were some changes around app seeding, but I do not really understand what I need to do, to remove apps.
Is there I script I can change or commands, that I can send?
