[Phase 1] Optimize - Cawemo: Point latest docs to the LTS versions #5379
Description
Acceptance Criteria (Required on creation)
Camunda 7 Optimize docs latest version should redirect to 3.15 & Cawemo docs latest should redirect to 1.9
Reason
Camunda 7 Optimize and Cawemo has no more minor release planned. Having both latest and last minor version maintained separately means additional maintenance effort and a risk of getting out of sync. Solution is the that latest docs should redirect to the LTS versions
Hints
For Cawemo we need to reach out to the Web Modeler team who maintains it to coordinate it.

Breakdown
- When clicking through the top-navigation in the docs the links should always point to /3.15 (optimize) or /1.9 (Cawemo).
- Master branches are removed.
- New default branches are respective versions.
- Redirects from /latest and /develop pointing to respective versions.
- /latest and /develop CI is removed.
- Latest drop down item is removed.
- This is aligned with the team taking care of Cawemo so that they are aware.
