This task is to add Ubuntu Core as a project participating with the Open Documentation Academy.

We list projects actively participating in the Academy both in the repository README.md and in the projects.md file used to build the website.

For this issue, you can use the GitHub web interface to submit your changes. There's no need to use the terminal unless you want to!
