📝 add diagrams and text for various topologies

• add diagrams, maybe link to configuration samples,...
• topologies to show:
  • single cdviz-collector use as final destination
  • 2 cdviz-collector use as source bridge + 1 destination (the original topology with sensors/watchers)
  • x cdviz-collector 1 per source (also for source that doesn't support NATS,...) + 1 destination + bus
• try to use log into diagram (more visual and friendly)
