Add more prometheus metrics to mempool, blocksync and consensus

Right now we don't use metrics that much, most of the meaningful info is included in traces which we collect on-demand. We are enabling metrics collection on our test-nets, thus we need to increase observability.

We need to understand which metrics (including corresponding to some of our traces) we should collect for some of our modules (mempool, consensus, blocksync).
