deps: update to v7 dependency for celestia-node

- Bump celestia-node v0.28.2 → v0.29.1-mocha
- Bump go 1.25.1 → 1.26
- Bump go-ethereum v1.16.2 → v1.16.8
- Update cosmos-sdk replaces for v7 compatibility
- Update Dockerfile builder image to golang:1.26.0-alpine
