feat: remove ComposeDB/JS-Ceramic, add Ceramic One self-anchoring docs (#113)

* feat: remove ComposeDB/JS-Ceramic, add Ceramic One self-anchoring docs

- Remove all ComposeDB documentation (37 files)
- Remove all JS-Ceramic documentation (31 files)
- Remove Wheel documentation
- Remove roadmap page
- Add self-anchoring documentation for EVM blockchains
  - Overview with prerequisites and quick start
  - EVM configuration with CLI options and environment variables
  - Covers both anchor verification (--ethereum-rpc-urls) and
    transaction submission (--evm-rpc-url, --evm-private-key, etc.)
- Update navigation to make Ceramic One the primary entry point
- Update homepage and intro sections to focus on Ceramic One
- Update DIDs docs to remove ComposeDB-specific references
- Add redirects for removed content paths

* remove PostgreSQL references from technical requirements

* address PR review comments for self-anchoring docs

- Add anchor contract section with pre-deployed addresses (Ethereum, Gnosis)
- Add deployment instructions linking to ceramic-anchor-service repo
- Replace --ethereum-rpc-urls with --evm-rpc-url (used for both submit and verify)
- Add --additional-chain-rpc-urls for validating anchors from other chains
- Update all examples to use simplified configuration

* add contract step to migration section
