Upgrade docker image to something recent and supported #9
Description
It's currently using Wildfly 22 in a centos 7.8.2003 container. That container is only available in the deprecated docker hub wildfly repo and is not getting any updates. The base OS has also been EOL for a while.
Changes for the container:
- They've moved to quay.io
- Everything below 26.1.2.Final has open security issues
- The latest version is 39
- Java JDK 17 and 21 versions are both available
With this being a jump of quite a few years, this might not be trivial, but it is sorely needed to keep it safe.
