Any way to change the theme?

this might not be the best way to ask this doubt but please pardon me, I've seen you used this theme called "minima" if i'm not wrong. but is there any simple way I can change this theme to other minimal theme from jekyll like this one

Yes, it is possible to change the theme...
No, it's not simple, at least not with this template I've made.

This template was created back before GitHub supported custom build pipelines. So you had to go through a number of hoops in order to get the site set up and working. Basically you just had to use GitHub's provided UI to set it up and you had to follow these obscure rules in order to make it work (like naming your repo with a special name, which isn't required anymore either).

So the goal of this template was for those who want an easy 1-click no-frills blog could use this. But once you start wanting to customize it, add features, add custom content and pages, etc...now you'll need to start learning basic HTML and CSS (at a minimum) as well as how Jekyll works.

If you want to build a blog that uses a different theme, I'd recommend following the instructions and tutorials from either Jekyll or GitHub as they're probably more up to date and would allow you to use more modern themes and features.
