Remove proprietary information from security skills

- Remove zendesk-ticket-analysis.md (internal planning doc with
  Snowflake table names and support ticket volume metrics)
- Anonymize sample-report.md: replace real cluster ID, cluster name,
  and employee username with generic placeholders
