Configuration based metrics

Currently we are collecting SQL Activity by running a SQL query (embedded int the code) and populating Prometheus metrics based on the values returned.

It would useful to extend this so we can provide arbitrary SQL queries and mappings to Prometheus metrics in a configuration, so user can easily add new metrics as needed.
