feat: enhance LangChain documentation and journal entries
- Added new journal entries for September 19, 2025, including links to LangChain ecosystem resources and tools. - Created documentation pages for the Langsmith cookbook and a guide on defining structured outputs in PromptHub. - Introduced a project brief for a LangSmith PromptHub sync tool, outlining its purpose, features, and target users.
