Is there a way to view/surface error logs in case app crashes

Hello @krisgrech,
It seems you are referring to the Simulator/App Preview. Stellar works as a preview tool for your app; hence you won't be able to debug or view error logs. We have plans to include this, but no ETA yet.
If you'd like to debug your app, you can enable the VNC access just before you start your build and launch your app on the simulator in the build environment, here you can view all the logs. Let me know if this would help in your case and if you need me to guide you further.
