Does anyone know how to change the logo on the navigation bar to a custom one

Just replace images files (.ico & .png) in 'public' folder.
Sites like https://realfavicongenerator.net/ or https://favicon.io/#google_vignette could help.

Sorry I was hasty. The public file is recreated each time hugo is compiled.
As you can verify in the favicon.html files in layouts/partials/docs/head and layouts/partials/head you have to place the .ico and .png. in the static folder.
Then create a static folder and place the .ico and .png there.
