Channel aliasing e2e tests

Write e2e tests for channel aliasing in ibc-go.

We currently lack proper support for IBC v2 relaying in ibc-go, so until that has been resolved, this is blocked. See blocked issue for status on this.

You can either copy the dependency on the go-relayer-api in the linked PR, or branch from it directly: #8559

I will clean it up more later, but if you get the e2e tests working with this, I can take it over the finish line when I get back.
