Automate Changelog creation

We can try to use this tool: [semantic-release](https://github.com/semantic-release/semantic-release) for changelog automation.

The idea is to create a new changelog for each new version, and fill the release notes with information from commit messages. These commit messages need to follow a convention, e.g. [conventional commits](https://www.conventionalcommits.org/en/v1.0.0/).
