Stub works only if you use function directly in the test, but not outside

A stub is not working outside of cypress tests.
Even basic example :

it('console logs',()=> {
 cy.stub(console, 'log').returns('hallo')
const inTest = console.log('whatever') // consoles 'hallo' in cypress
visit('/') // where we do console log also and it console logs as usual.
})

I am using nuxt SSR project. Starting it separately and opening the cypress dashboard.
