Switch build system to poetry

This is more of a question/suggestion. What's the appetite around using poetry install of pip for building, installing dependencies?

@jcorrado76 I used poetry to build and push the package out to the pypi website. I'm not all that familiar with poetry myself, and rarely use it. I'm happy to integrate it more into the project, whatever that looks like.
