Enhancement: Rewrite and create a new step-by-step guide for docker / docker compose

What features would you like to see added?

I have been reading the Docker guide recently and, honestly, it's quite confusing at the moment. I would suggest archiving the "old" guide and creating a new, easy-to-follow step-by-step guide on how to set it up with Docker or using Docker Compose.

The guide suggests cloning the repository, but further down, it states that this is no longer necessary. This would also make it easier to understand when deploying via Portainer Stacks.

PRs welcome. When you bring portainer into the mix, the docker guide gets a bit more complicated but regular use of docker is pretty simple
