[Enhancement]: Filter out dated snapshots

What features would you like to see added?

I have recently switched from
OPENAI_MODELS=gpt-4.1,gpt-4.1-mini,o3-mini,o4-mini,o1,o3
to
OPENAI_MODELS=""

as it was getting tiresome to manually update the allowed models list as models come and go.

It is great that with this new functionality we have access to all available models, however I would like to filter out all models that have a date snapshot as it is cluttering the list.
