Binder links don't work

The Binder links don't work. Perhaps something has bit-rotted.

When I click a link to Binder (e.g., https://mybinder.org/v2/gh/data-8/textbook/main?urlpath=lab/tree/chapters/01/3/Plotting_the_Classics.ipynb), I get a bunch of errors:

Do we need these extensions? (in .binder/postBuild)

Hoping to get in page execution up again with jupyter book 2. We can decide from there whether we want to use Binder, hook up to datahub, or use jupyterlite (which I think is a great option!)
