refactor(docs): rename products -> overview, deploy -> self-hosted (#3032)

* refactor(docs/en): rename products -> overview, deploy -> self-hosted

- Rename 00-products/ to 00-overview/
- Rename 10-deploy/ to 10-self-hosted/
- Update all internal links to new paths
- Add redirects for old paths in site-redirects.ts

* refactor(docs/cn): rename products -> overview, deploy -> self-hosted

- Rename 00-products/ to 00-overview/
- Rename 10-deploy/ to 10-self-hosted/
- Update all internal links to new paths
- Fix fragment file links

* refactor(docs): reorganize cloud and self-hosted directories

Cloud-First reorganization:
- Create 10-cloud/ with overview, getting-started, resources, administration, security
- Move 20-cloud/ content to 10-cloud/
- Move 00-overview/02-dc/ to 10-cloud/00-overview/

Self-Hosted reorganization:
- Rename to 20-self-hosted/ (lower priority in sidebar)
- Create 00-editions/ with community and enterprise
- Reorganize deploy -> deployment, upgrade+monitor -> operations

Update all internal links and redirects for both EN and CN.
