EdgeStack and Emissary-Ingress 3.x docs has typo of (defualt)

While reading the docs regarding the API change for Emissary-Ingress auth service I found a typo pictured below.

Also would like to know if in the same paragraph this section Emissary-ingress 3.Y. should actually be Emissary-ingress 3.x.

Will submit an MR to fix the default typo.
