Merge bitcoin#25121: test: compare /mempool/info response with getmempoolinfo RPC

1df42bc test: compare `/mempool/info` response with `getmempoolinfo` RPC (brunoerg)

Pull request description:

  This PRs compares `/mempool/info` REST response with `getmempoolinfo` RPC in `interface_rest.py`.
  Similar to bitcoin#24936 and bitcoin#24797.
