Is it possible to change a setting for all watches?

I have ~200 URLs being monitored right now and they all have a "Time Between Check" of 3 hours.
Is it possible to change that value for ALL the monitored URLs or at least for a subcategory? (Like the ones tagged as X)..

Just go on the settings tab and change a global setting. That will be reflected on ALL the watches.

You can use the new global/tags menu option in 0.43 too
