Aside from security updates and visual polish, are there any specific features/benefits you're looking for in Fullcalendar later versions, that the current one doesn't provide?

The current version is simply outdated; you should generally check whether you can upgrade to a more recent version. The version used, 3.10.5, is from November 2021, making it four years old.
