Consider switching to SocketsHttpHandler

Description

The two examples to configure the http client handler and to disable cookies create new instances of HttpClientHandler. Should these be switched to SocketsHttpHandler?

That request doesn't really make sense since HttpClientHandler is using SocketsHttpHandler internally already
