Change OpenAPI AOT/Trimming as .NET 10 will require less steps to achieve this

Description

I'm working on this issue I created which makes dotnet new webapiaot include OpenAPI out of the box.

That issue mentions that this should also be updated in the docs, which is what this issue is for.
