Remove lingering VS for Mac guidance

I see some leftover VS for Mac guidance in the main doc set that needs to go. I'll take care of it shortly! 🏃‍♂

Yikes! ... 328 mentions across 111 files 🙈. The drop-dead 💀 date was 8/31/24, and this doesn't follow our repo convention to only document the latest version of tooling (in most cases). I'm discussing this situation with DR offline now to see if I should proceed to 🔪 out the remaining references.
