Installing a specifc iOS workload?

Can someone tell me how to install the iOS workload that goes with Maui 9.0.40 and not keep getting the iOS workload that requires XCode 16.2?
Running dotnet workload restore in a folder with the csproj Maui version set to 9.0.40 and then building just ends up saying the wrong workload is installed and XCode 16.2 is required.

According to this page Maui 9.0.40 should use XCode 16.1

You can use workload set version 9.0.101.1 in order to install these versions of the SDKs, please make sure to be using the latest .NET SDK 9.0.101 before issuing the dotnet workload install command below. You can validate your installed dotnet version using dotnet --version do make sure it shows 9.0.101 or greater before proceeding.

dotnet workload install <workload id(s)> --version 9.0.101.1
