Add Zig support to the build pipelines

Hi,

Could you add Zig as an option to the build pipelines? So, an extension developed in Zig can also be published to the community extensions, just like a C++ or Rust extension.

Currently, a Zig-based DuckDB extension can't be published as community extension, and it is needed to be distributed somewhat manually.
