Ingredients:

  • 1 lb raw shrimp, peeled & deveined
  • 1/2 cup celery, finely diced
  • 2 tbsp chives, finely sliced
  • 3 tbsp red onions, finely diced (shallots work too)
  • 1/2 cup mayonnaise
  • zest from one lemon
  • 1 tbsp lemon juice
  • 1 tbsp prepared minced horseradish
  • 2 tbsp parsely, finely chopped
  • salt
  • black pepper

Directions:

  1. Bring a large pot of water to boil and add 1/2 teaspoon salt. Add shrimpt and cook ~3-5 minutes or until done.
  2. Blanch shrump in ice cold water to stop the cooking process and make them cooler to handle.
  3. Drain water and chop shrimp.
  4. Mix all ingredients, except shrimp, in a large bowl. Add chopped shrimp and stir.
  5. Add more mayonnaise, salt, and pepper to taste. Toss in more horseradish if you like it spicier.
  6. Serve cold shrimp salad over lettuce greens, or with crackers, toasted bread, or as a sandwich.

Serves 4

Notes:

  • Probably best to boil for exactly three minutes then put into ice bath.
  • Good on toasted brioche with a bit of mayo and avocado as a sandwich.
