Update iceoryx to v0.8.0

Once the upcoming v0.8.0 is set, the iceoryx2 submodule can updated.

The new iceoryx2 has arrived: https://github.com/eclipse-iceoryx/iceoryx2/releases/tag/v0.8.0

The most notable change for the C#-Binding is the change in the Logging Backend:

• https://github.com/eclipse-iceoryx/iceoryx2/blob/v0.8.0/FAQ.md#changing-log-backend
• iox2_use_console_logger and iox2_use_file_logger have been removed
• instead the console logger is enabled by default
• to make use of the file logger, iceoryx2 needs to be rebuilt with the following flags set:
  cargo build --package iceoryx2-ffi-c --features iceoryx2-loggers/std --features iceoryx2-loggers/file --no-default-features --release
