In Security Policies, there are options such as Sign, Sign and Encrypt, and Sign;Sign and Encrypt for each authentication level.

How do I set these options in Milo Client?

You configure the client with an EndpointDescription that has the desired security settings, as part of the OpcUaClientConfig.
