[Y-Build] Please use openjdk-25-ea+27 for tests ep437Y-unit-linux-x86_64-java25

I just learned that test jobs specifically select the JDK version rather than using what's available on jenkins.

Currently some test failures are caused by using the outdated version openjdk-25-ea+21.

Meanwhile build 27 is available as https://download.java.net/java/early_access/jdk25/27/GPL/openjdk-25-ea+27_linux-x64_bin.tar.gz

Please update https://ci.eclipse.org/releng/job/YPBuilds/job/ep437Y-unit-linux-x86_64-java25 to this version for more accurate test results.
