change mock service location

The mock provider has been moved to a specific repository (https://github.com/eclipse-kuksa/kuksa-mock-provider). Therefore, we should adapt the example container manifest for the fetch from the repository and container registry. In addition, it seems like the mock provider expects a file mockservice.py to be present instead of mock.py. So we need to adapt this as well.
