pb-tify: current endpoint fallback is problematic when running behind a proxy

When running behind a proxy, is extremely likely that @endpoint is just an empty string, so it falls back to http://localhost:5173 creating a fetching error (see https://github.com/eeditiones/tei-publisher-components/blob/next-4/src/pb-tify.js#L409)

@HelenaSabel the problem is that during development the dev server works as a proxy. So I m hesitant to just remove the fallback in here.
