Investigate whether the ToStringProcessor can be removed #484

Description
The ToStringProcessor was added to our OTEL logger for reasons that we don't remember.
I tried removing it for the ETOS API and it seemed to work fine.
We should investigate if we can remove this for all services and instead fully rely on opentelemetry.
