Fix discrepancies between local docs-builder results, CI builds, and production.

• Add automated checks/tests to catch mismatches early.

Acceptance criteria

• A build run locally looks the same as in CI and production.
• Local docs-builder output matches CI and production results (no surprises between environments).
• Discrepancies are tested and resolved before rollout.

This needs a fundamental change in our supply chain.

We would need to use only production versions in CI.

For local builds this is tricky.. because you need the exact binary version. But I can imagine having a more prominent error or warning message if there is a mismatch in the version compared to production.
