[Request]: Remove Elastic Entity Model docs

Description

We are removing the Elastic Entity Model from the code-base to remove some problems in serverless.

This was previously only accessible to customers if they turned on a feature flag but we're going to remove it altogether because it is causing issues on serverless (it's quicker to remove than figure out how to fix it).

This issue is to remove references to it in our docs. Specifically, remove this:

Elastic Entity Model Docs
Inventory docs

Resources

Hi @roshan-elastic, these docs are already hidden from the TOC, so users shouldn't be able to find them unless they have the URL or search for Elastic Entity Model. Do we want to go ahead and delete them completely?

I've actually noticed some users have started trying it out and when we remove it they might point towards these docs and say 'hey - this is documented but it doesn't exist anymore'.

I'm thinking of three options:

1. We remove them
2. We put a note at the top of the docs to explain it's gone (and then eventually remove them)
3. We leave them

I don't think (3) works as it doesn't exist anymore.

Do you have any thoughts on (1) vs (2) from your experience with docs?

@roshan-elastic if we have people using them, we could keep them hidden and add the "removed" tag so people will know not to expect the features when moving to a new version. Was this removed in 9.0 or before?
