ECE available docker images needs some reviewing #2206

What happened?
As the current docs are intended for ECE 4.0+, and ECE 4.x does not support deployments in 7.x, 6.x or older stack versions, I think we should review if we need to keep the long list of available images starting with Elasticsearch 2.x.
Do we need to propose the download of 7.17.29 and 6.8.23 stack packs for an ECE offline installation when they are not supposed to work with ECE 4.x?

Another table that needs reviewing is the following:
I think 4.0.1 probably comes with 8.18.x stack pack and not with 8.18.0 specifically.
We probably need PM or devs acknowledgement here.
