Assess AI Assistant docs state

Today we have AI Assistant related content in

• security docs
• obs docs
• es docs
• explore & analyze docs

We should assess this and have a clear strategy about how to document the AI Assistant(s) to ensure the information stays accurate and surfaces in the right places

cc @bmorelli25 @benironside @mdbirnstiehl and potentially @leemthompo we should re-open this topic as these docs have been evolving fast lately

couple thoughts off top of my dome:

• the ES docs are just a pointer to Obs docs (technically it's the Obs + Search Assistant) for Search users who're not aware it's a unified assistant
• the E&A docs are strong candidate for deletion (incorporating any info into the two main pages)

This is definitely something on my radar, and something I'd really like to focus on after 9.1. The overall organization of the Obs assistant page is a bit of a mess, and I think @benironside and I could definitely work together to see where the different AI Assistants are similar and how we could create consistency between the sets of docs.
