Review docs content accessibility

## Idea

Identify and fix accessibility issues in our docs content and practices. Document what’s not well captured today and find ways to avoid having to make a new fix cycle in 2 years: more education, linting… (one similar project was done 2 or 3 years ago but best practices haven’t really been picked up despite being documented in the style guide and communicated)
