[ResponseOps][Docs]: Remove technical preview warning from maintenance window docs #2796

- We are making maintenance windows GA in 9.2, for which we need to update current MW docs to remove technical preview warning.
- Update screenshot
Also we have removed category selection from create/edit maintenance window form and added a callout in issue elastic/kibana#226808
Please update the screenshots and remove information related to category selection from the docs to reflect the same.
