Review API release status tags across Elasticsearch APIs #3082

Some APIs in Elasticsearch API docs are incorrectly tagged as Technical preview (or Experimental) even though they are long out of preview. A recent example is the Tasks Management API (GET _tasks), which is still marked as preview in the Elasticsearch specification despite being stable for many years (see issue #196 for details).
To ensure consistency and accuracy, we should perform a comprehensive review of all Elasticsearch APIs in the specification and update their release status where necessary.
